Pancake Tuesday is just around the corner and if you’re like me and trying to eat healthy & gluten free, taking part can be a bit tricky. I’m a firm believer that eating healthy can be easy and fun! Rather than restricting yourself, you can focus on finding healthier alternatives to your favourite foods. Today I wanted to show you how you can do Pancake Tuesday the healthy & gluten free way with just one quick stop in Lidl!
Personally, I aim to eat a diet that’s low on common (and less common) allergens, to help combat my severe eczema. That includes gluten and dairy, which are the main culprits when it comes to most skin and digestion problems.
When you’re trying to make healthier choices, it’s really handy to be able to pop down to your local shop and know that they’ll have a decent gluten free range available! During my weekly shop at Lidl, I’m always grateful for their Just Free gluten free range. As a weekend treat for myself, I often get their gluten free pancakes. They are only €1.69 and make for two delicious breakfasts for me. I know they’ll be my go-to this Pancake Tuesday as it’s so much quicker than doing them from scratch! Plus, there’s no mess afterwards!
1. Just Free Pancakes with Blueberries & Maple Syrup
Blueberries are one of my favourite fruits. Not only are they a powerful antioxidant, but they are also anti-inflammatory, which in the case of eczema sufferers is a winner. Unlike other berries, which can often be too acidic, I’ve always found blueberries to be the best!
Kilderg Pure Canadian Maple Syrup seems like the obvious choice for pancakes and not just for its lovely taste! Maple syrup supplies less sugar overall to your diet than refined sugar, plus more nutrients. Compared to crystallized sugar, it doesn’t undergo the long complex process of turning sugarcane stalks to crystals. As a result, it’s a lot more natural substance.
2. Just Free Pancakes with home-made chocolate sauce
I’ve recently had a moment of improvisation and came up with this delicious, super healthy chocolate sauce. It’s literally just a banana, table spoon of cacao and a dash of dairy milk alternative popped into a blender. Such a great substitute for chocolate spread, without all the sugar and additives! You could also add some Madagascar Vanilla Extract and sprinkle dark chocolate shavings on top.
3. Carrot Cake Pancakes
If you wanted to shake up the flavours a bit and make pancakes of your own, these are so light and soak the whole house in a beautiful smell!
- 50g Just Free porridge oats
- 2 eggs
- 1 grated carrot
- 1 tsp cinnamon
- dash of milk or milk alternative of your choice
Optional: You could also add some nutmeg and Madagascar Vanilla Extract for extra flavour. If you’re not allergic or intolerant, some nuts would be lovely too.
Blend the ingredients until smooth and fry over sunflower oil in a small pan.
The result is a taste sensation somewhere between a carrot cake and a pancake. Delish!
