A Taste of 56 Central

One of life’s many joys is finding new and exciting places to eat! Whenever I’m meeting someone I always try to pick restaurants and cafés that are a bit different, have cool décor and offer healthy, tasty options.

If you’re like me, you’d really enjoy 56 Central – it ticks all of these boxes!

56 Central is a chic new Galway eatery that stands where the iconic Lynch’s Café used to be. I  was really happy to see that space get a new lease of life. It’s right smack in the middle of Shop Street and now looking better than ever!

When I found out that it’s Gill Carroll that’s behind the overhaul, I couldn’t wait to see what she’ll do with the place. Gill set up 37 West two years ago, which is a really hip & healthy café on the West side of town, much loved by the locals!

Gill’s aim with her new venture at 56 Central is to connect people back to why they eat and to choose locally sourced produces where possible. The place is all about the energy of gratitude and entrepreneurship, while taking time to enjoy the good things in life!

I’ve lunched there before, but it was at this mixer event with folks of Into the West Blogger Network where I got to truly sample the menu!

The Food

The elderflower prosecco on arrival really set the tone for the evening! It’s a blend of elderflower cordial and prosecco, it was so light and refreshing!

We got treated to an absolute feast and a great array of flavours on the night! I reintroduced a little bit of meat to my diet recently and must say the buttermilk chicken was probably my favourite although it’s a tough call! Everything looked so colourful and I loved the presentation – I am sucker for slate plates, I even bought some for the house recently.

The Décor

56 Central has been careful designed by a team of local talents including Dan Gardener Original and Finbar 24/7 and of course Gill herself.

I had admired the funky wall art when I first visited the place, but now that Gill explained the wonderful design idea that connects all the rooms, I like it even more! When you walk up the stairs and enter the restaurant you will see a giant heart – which has 2 pumps – each pump sends blood around our body – the blood line is represented by a continuous line around the building into all our rooms of reflection. There’s The Garden which represents nature, The Site which represents food, The Art Room for art and culture and The Vault for people, love & connection. On the night we had our cocktail reception in the Vault area and then dined in The Art Room – which I thought was very fitting for a room full of bloggers!

I usually gravitate towards white bright spaces, but I’ve rarely scene a dark colour scheme pulled off as well as here! The chalky grey fireplaces are my fav!

It’s the little details that I really loved, like the mega cute cushions from My Shop – Granny Likes It that have various Galway sceneries depicted on them in polaroid style.

It was such a prefect way to spend a Friday evening – chatting to like-minded people in a chill atmosphere and enjoying the massive spread that Gill put on!
